AUTUMN RECIPE - DELICIOUS ROASTED TOMATO SOUP

With another cold front on the way, it's time to snuggle up and keep warm, what better way to do it than with a nice bowl of hot soup? Tomatoe soup is a classic comfort food and we have this go-to recipe for something quick and delicious you can whip up from scratch!
INGREDIENTS:
- 1/2 a bulb of garlic
- 2 red onions
- 2kg ripe tomatoes
- Pinch dried oregano
- Sea salt
- Black Pepper
- Olive Oil
- 1 litre vegetable stock
- A few sprigs of fresh basil
- Loaf of Ciabatta
- Red wine vinegar
- Cheese (optional if you wanted to make cheese toast)
- We threw in a few sprigs of rosemary and sage (optional)
METHOD:
- Preheat your oven to 200 degrees Celsius
- Break the garlic cloves up and peel and cut the onions into quarters
- Halve the tomatoes and lay them on a baking tray, cut side up
- Throw in your garlic cloves and onions and season them with your oregano, salt and pepper and olive oil
- Roast your tomatoes in a hot oven for 50 minutes to an hour or until the tomatoes are soft and sticky
- Scrape everything from the baking tray into a large pot, pick out the garlic cloves and squeeze the soft flesh into the pot
- Pour in the vegetable stock with the roughly chopped up basil
- Cut up your Ciabatta into slices and grated cheese if you want to make some cheesy toast (any cheese of your choice will do)
- Pop your Ciabatta into the oven and keep and eye on it
- Add a splash of red wine vinegar to your soup and blitz with a hand blender
Your soup is ready to be served!
