Lauren Graham
2 Minute Noodles step aside, there's a new convenience noodle on the block to take away your Winter blues! We're talking about bacon and cheese macaroni you can make with just a microwave and mug, in minutes. Got your attention? Read on for the recipe...
This is the ultimate Winter quick fix for the lazy chef when groceries are scarce. You can make this with any pasta shape - if you're using spaghetti, just cut it into small pieces. The recipe assumes you're cooking with raw pasta, but you can also use cooked leftover pasta from the night before. You can add or remove ingredients according to what you have on hand, but here's a rough guide:
INGREDIENTS (serves 1)
- 70 g raw pasta (any shape will do)
- 1/2 Cup Water
- 100ml Cup Full Cream Milk
- 1 Tsp Butter
- 1/2 Cup Grated Cheese (gouda, cheddar, parmesan or a mix)
- Bacon bits
- Chopped Tomatoes (optional)
- Salt & Pepper
METHOD
If you're working with cooked leftover pasta, skip the first step. If you're starting from scratch, place pasta in a bowl in the microwave with water and salt to taste. Cover with cling film and poke a few holes for the steam to escape. Microwave on high for 4 minutes. Remove to stir and place back in the microwave for 3-4 minutes depending on the type of pasta.
If you're adding bacon, chop and microwave for 3 minutes to cook.
Add the cooked pasta, butter, milk, cheese, cooked bacon bits, chopped tomatoes salt and pepper to taste into your mug. Mix together. Add a generous sprinkle of cheese to the top and microwave for 3 1/2 minutes until hot and bubbly. And Voila! Cheesy macaroni in a mug in minutes!
TOP TIP: Place the mug on a plate to catch any melted cheese.
Bon Apetit!
